The Baked Lemon Poppy Seed Donut

These delightful donuts are a perfect sweet treat for any family big or small - and although lemon is often ideal for the Spring and Summer they are great all year long. Trust me!

 

Hi Friends! Enjoy one of my all-time favorite recipes with a good cup of coffee and the people you love.

Recipe:

Time: 10 minutes to prep | 10 minutes to bake

The recipe will yield 6 donuts.

Ingredients for donuts:

  • 1 1/4 cups of all purpose flour

  • 1 1/4 teaspoons of baking powder

  • 1/2 teaspoons of salt

  • 2 1/2 tablespoons of poppy seeds

  • 1/2 cup of granulated sugar

  • 2 teaspoons of freshly grated lemon zest

  • 2 1/2 tablespoons of unsalted butter (melted)

  • 1 large egg

  • t teaspoon of vanilla extract

  • 1/2 teaspoon of lemon extract

  • 1/2 cup of milk ( I use almond, but use whatever you and your family prefer!)

Ingredients for glaze:

  • 1 1/4 cups of sifted confectioners sugar

  • 1 tablespoon of milk (again, your choice!)

  • 1/4 teaspoons of salt

  • 1 tablespoon of lemon juice (or to taste)

  • 1 1/2 teaspoon of freshly grated lemon zest ( this adds so much flavor!)

How to:

  1. Preheat the oven to 350 degrees and grease the donut pan.

  2. Whisk together flour, baking powder, salt and poppy seeds.

  3. In a separate larger bowl - combine granulated sugar, lemon zest (mix together), then add the melted butter and beat the ingredients together. Then add the egg, vanilla and lemon extract - mix together.

  4. Add the dry ingredients into the wet ingredients and fold together gently (you don’t want to over work, so I recommend you use a spatula).

  5. Put the mixture into a large zip lock bag, cut one of the corners and pipe into the donut pan - filling each mold 2/3 of the way.

  6. Bake for 10 minutes or until they are lightly golden brown.

  7. Let the donuts cool before dipping into the glaze.

  8. Note: Add alittle lemon zest and poppy seeds to the glazed donuts for a little extra flavor. :)
